The pressing of the olives is our pride and joy. Starting with the 2019 harvest the farm has had the olive press system (frantoio) “Mori-Tem Oliomio 200 Kg.”
It’s a cold-press system designed to produce oil with a high phenolic content during the extraction.
The availability of the olive press at the farm makes possible an even higher-quality oil, already high due to the altitude of the olive grove, the exposure to the sun, and the variety of the olives: frantoio, moraiolo, pendolino, leccino, as well as a new variety discovered in a corner of the olive grove still to be studied.
The pressing at the farm allows us to follow the complete process of production, from taking care of the olive trees to bottling the oil. We can ensure that the oil doesn’t mix with residuals of other oils from different farms. It also lets us press daily, immediately after the harvest.
